Lemon Ice Box Pie

Servings: 8


  • 2 egg yolks
  • Juice of 3 lemons (approx. 6 tbsp)
  • 1 can of Eagle Brand (sweetened condensed milk)
  • 12-15 large graham crackers
  • 2 sticks of melted butter (approx. 15-16 tbsp)


  1. Press the crumbs of approx. 12 large graham crackers into a regular size pie pan.
  2. Add approx. 2 tbsp melted butter to the graham cracker mix.
  3. Prepare the filling:  stir until thick 2 egg yolks, juice of 3 lemons, 1 can of Eagle Brand.
  4. Pour filling onto the crust.
  5. Chill before serving (*use a freezer to decrease the chill time)


This is a recipe my Grandmother and Father used to make.  It’s delicious!
